Let me just say, “That’s one big bird!” After the beheading, draining, plucking, cleaning, weighing she is a solid 28 pounds of Thanksgiving Day gobble. Things are depressingly rough right now and it is going to be hard to leave her in the freezer until Thanksgiving. And, jeejiminy, I know there are eight of us and two grandparents for Thanksgiving, but we’ll never be able to eat all that bird. And as you can see, she fits, just barely, but she fits in my roasting pan. I hope she fits in the smoker, but at least I can get her in the oven.
