This is a very easy recipe and it’s basically a 1:1:1 mix plus buttermilk.
Here’s how I make pancakes (you will need to adjust for the quantity and size of your hungry tummies):
Ingredients:
3 cups Baking Mix Substitute
3 eggs
3 tablespoons of melted butter (I use olive oil or dairy free margarine)
2 1/2 to 3 cups of buttermilk (If you use regular milk or rice milk you may only need 2 to 2 1/2 cups)
Directions:
Mix together the Baking Mix, eggs, butter.
Add the buttermilk to consistency – sometimes I use rice milk and depending on the day it usually takes 2 – 2 & 1/2 cups. You want the consistency to be like a boxed cake batter ready to pour and lumpy. Note: Boxed brownie consistency is too thick.
